I was inspired to make apple cupcakes. However, apples are massive sugar and carb balls. Generally this autumn fruit is excluded from Keto and Atkins diets, but there’s nothing like the taste of warm apple pie! To cut down on carbohydrates and sugars in cupcakes, this recipe uses Oat Flour and Xylitol so they are gluten-free and zero-glycemic.
Apple Cupcakes (gluten-free, diabetic-friendly)
Prep Time: 30 minutes
Cook Time: 18 minutes
Yield: 12 cupcakes
Ingredients:
1.5 cups of Oat Flour
1 cup of Almond Flour
1/2 teaspoon of Xantham Gum
1/2 teaspoon of Baking Soda
1 tablespoon of Baking Powder
1/4 teaspoon of Salt
2 large apples to 4 small apples
350 grams of Granny Smith apples (~ 2 apples)
~1/2 an apple for garnish.
1/4 tsp Nutmeg
1/4 tsp Ginger
1/2 tsp Cloves
1 tsp Cinnamon
1 tsp of Vanilla Extract
1/2 cup of Xylitol
2 Eggs
1/4 cup of melted Butter, unsalted
Sugar-free Cream Cheese Frosting or Sugar-Free Coconut-Pecan Frosting
Instructions:
Preheat oven to 350 degrees Fahrenheit.
Thinly dice 350 grams of apples, which should roughly be 2 apples.
Cut third apple in crescents and lay on baking sheet. Put in oven immediately to begin drying.
In a large bowl, combine apples, sugar, spices, and vanilla extract
In different bowl, combine oat and almond flour, baking soda and powder, xantham gum, salt, and butter.
Mix wet and dry ingredients together.
Fill cupcakes to brim.
Preheat oven to 400 degrees Fahrenheit. Once the oven is done preheating to the new temperature, take out the drying apple crescents and put in the cupcakes.
Bake cupcakes for 18 minutes.
Let cool and then frost!
Garnish with dried apple slices and nuts if desired. Enjoy!
